How do you get a crispy crust on the bottom of a pie? ›

Choose the Right Rack in the Oven

Can I use brown paper bags instead of baking paper? ›

Caution: Never Use Paper Grocery Bags

Sometimes, someone may say just use a paper grocery bag instead of parchment paper. This is a very bad idea, because of the high likelihood of the bag catching fire in the oven.

Can brown paper bags go in the oven? ›

Grocery bags are not intended or formulated for cooking foods and should not be used.

Should I Prebake my pie crust for apple pie? ›

You don't have to pre-bake the bottom pie crust for this pie. There's simply no need to take this extra step because the apple pie bakes for a really long time in the oven. If your pies have soggy crusts, you may not be baking them long enough.

Should I bake the bottom pie crust first? ›

But the one surefire way to make certain your pie's crust will be golden brown, crisp, and delicious — just as appealing as its filling — is to prebake it. That's right: bake the bottom crust first, before adding the filling.

Should you poke holes in bottom of pie crust? ›

With docking, the holes allow steam to escape, so the crust should stay flat against the baking dish when it isn't held down by pie weights or a filling. Otherwise the crust can puff up, not only impacting appearance but also leaving you with less space for whatever filling you have planned.

What apples not to use for pie? ›

For more on all these apples, including what they look and taste like, see our baking apple guide below. There are a few apples that don't make the cut. While great for snacking, Gala, Fuji and Red Delicious are the most common apples that won't hold up in the oven and will give you a watery-mushy pie, tart or cake.

What is the best thickener for apple pie filling? ›

Very often flour or cornstarch is used, but in certain instances tapioca, arrowroot and potato starch can also help achieve the desired consistency. Tapioca starch is preferable for products that will be frozen because it will not break down when thawed.

What is the apple pie rule? ›

Apples, Cheese, and Law

According to law firm Nicolet Law, it's often cited that Wisconsin legally requires apple pie to be served with a slice of cheese. While that's not a bad idea and does sound very Wisconsin, it's not a law. But Wisconsin did come pretty close to it back in the 1930's.

How do you brown the bottom crust of an apple pie? ›

Getting a brown, flaky/crispy bottom crust on your pie is all about quick and effective heat transfer. That's why aluminum or aluminum/steel pans — rather than glass or stoneware — are your best choice for baking pie. Metal, especially aluminum, transfers heat quickly and efficiently from oven to pie crust.

Should I egg wash the bottom pie crust? ›

You've spent time and effort putting the pastry together, so don't sell yourself short by skipping the final step—the egg wash for the pie crust. The truth is that cream and egg washes are a simple but vital step to improving the appearance and flavor of pies and other baked goods.

What is done on the bottom crust before adding the pie filling? ›

After dough has rested, crimp the edges of the dough, and prick the bottom and the sides of your pie shell at least 15 times. Line a piece of aluminum foil around your crust and fill with pie weights. Place your pie crust on the pre-heated sheet pan and bake for 20 minutes.

What does baking in a paper bag do? ›

What paper is safe to bake with? ›

Baking paper – also known as bakery paper or parchment paper, as it is often called especially in the US – is greaseproof paper that is used for baking and cooking.

What paper can you not put in the oven? ›

Despite its heat resistance, parchment paper can't handle the heat of any broiler, which can reach temperatures upward of 500°F. And wax paper? It should never come near the high heat of the oven or broiler.
