Greek Yogurt Pancakes are going to bring a little extra protein to a totally awesome breakfast. They're almost creamy inside with just a hint of tang. Top them with butter and syrup and lots of fresh berries for a magical start to your day.

I've written many times on this site about the significance of pancakes in my family and my memories of my dad flipping pancakes on a lazy Sunday morning. This got me thinking about how kitchen magick is also an excellent way to honor our ancestors. It's a way for us to connect with our elders who are still with us as we learn by their side how to cook their signature dishes. And it's also an ideal way to keep alive the memory of our loved ones who have passed on.

Every time I make cookies or fudge, I remember my mom and how she would turn the house into a cookie factory at the holidays. Every time I taste kalua pig, I think of my grandma and all her backyard luaus. I never got to perfect my other grandmother's macaroni salad recipe before she died. Maybe someday I'll share it with you and tell her story.

They say we're not supposed to share stories on food blogs anymore, but we're looking for something deeper than just a recipe here. I believe in making connections, and food is an ideal way to do that.

What makes Greek Yogurt Pancakes so awesome?

These Greek Yogurt Pancakes are awesome on so many levels. Most importantly to me, they're delicious. They don't have a lot of flour, so they stay really tender and almost creamy. And there's just a slight acidic tang from the yogurt that brings and added element of flavor that I love.

Greek Yogurt is also high in protein, so these pancakes will keep you energized longer than usual. It's not just a straight carb rush that leaves you feeling like you need a nap at 10 am. I love butter and syrup on my pancakes, but you could also add berries or nuts or sliced banana. Whatever floats your morning boat.

How to make Greek Yogurt Pancakes

There's nothing tricky here. It's the usual method of combining dry ingredients, then combining wet ingredients in a separate bowl before bringing them together gently to form a batter. This particular batter is quite liquidy, so make sure you have your pan preheated and lightly greased before adding the batter.

These aren't going to cook up quite as thick as more tradtional pancakes, and they won't be as stiff, either. You'll need to have a little courage when flipping them. Commit to the flip and go quickly. It'll be fine. And if you splatter a bit of pancake batter, it's not the end of the world. Just make sure the batter is set around the edges before you try to flip them. You'll find all the details in the recipe card below.

FAQ

Do I need to use Greek yogurt?

I would definitely use a strained, thick yogurt rather than a plain or natural yogurt that's a bit more runny. We're using twice as much yogurt as flour, so you need it to be thick enough to hold everything together.

What toppings would be good with these pancakes?

The sky's the limit. Honey, maple syrup, berries, bacon, whatever you like. Make it as healthy or indulgent as you want. That's the beauty of home cooking.

Magickal Properties of Yogurt

Yogurt is one of those foods that's been around for centuries that we modern muggles have mostly forgotten how to make. Essentially, it's just spoiled milk treated in a very delicious way. My instinct would be to use it in a spell for change. My research suggests its associated with healing spirituality, and creativity. (Source: Beneath the Moon)

Everything is magical if you look at it the right way, even breakfast. Make some Greek Yogurt Pancakes and remember where you came from. It's gonna be awesome.

Tips for the Perfect Pancakes

Baking soda should be no more than six months old. Stir the batter only until the wet and dry ingredients are incorporated; overbeating will make pancakes tough and chewy instead of fluffy. No Buttermilk, No Problem!

Why are restaurant pancakes so fluffy? ›

Buttermilk is often used instead of regular milk

Many restaurants use buttermilk instead of dairy or plant-based milk when making pancakes, which changes the interaction of the ingredients before and during cooking — leading to a fluffier, more texturally satisfying, and tastier result.

What does Greek yogurt do in baking? ›

It's used similarly to sour cream in cakes and other baked goods, but can also be used in glazes or folded into whipped cream. Many bakers love the way it helps keep baked goods moist while adding a tang, not unlike baking with buttermilk. Its acidity also helps activate the baking soda in batters for a nice rise.

What does adding an extra egg to pancakes do? ›

Eggs are a crucial ingredient. They provide the cakes with the structure to hold light bubbles. Eggs also give the batter additional, richer flavor from the yolk fat. If you add too many eggs, you'll have “pancakes” that look more like custard or crepes.

Restaurants use better quality ingredients

However, along with that ease, you may be taking a hit in the overall taste department. Restaurants tend to use real, farm-fresh eggs and real milk when making their pancakes, which as you might guess, adds to a richer, higher-quality eating experience.

IHOP, for instance, requires its pans to be heated to 350 degrees Fahrenheit, and uses Crisco instead of butter to grease it, says Grimm. What is the difference between yogurt and Greek yogurt? ›

Greek yogurt is regular yogurt that has a thicker, more dense consistency due to a filtering process that removes whey and liquids or through the addition of whey protein and milk protein concentrates.

Is baking soda or baking powder better for pancakes? ›

Baking soda is essential for baked goods, but baking powder is really what makes pancakes and biscuits rise and become so super fluffy. What happens if I dont put egg in pancake mix? ›
